- Eggplant - 1 medium, diced
- Potato - 1 medium, cubed
- Onion - 1 medium, chopped

- Chickpeas - 100 grams, canned and drained
- Olive Oil - 2 tablespoons
- Vegetable Broth - 250 ml
- Ground Cumin - 1 teaspoon
- Ground Coriander - 1 teaspoon
- Ground Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Parsley - for garnish
Steps
- In a large tagine or heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the sliced carrot, zucchini, bell pepper, eggplant, and potato, cooking for another 5-7 minutes until they start to soften.
- Add the chopped tomato, chickpeas, and vegetable broth to the pot.
- Sprinkle in the ground cumin, coriander, cinnamon, paprika, salt, and black pepper, stirring well to combine.
- Cover the pot with a lid and reduce the heat to low, allowing the vegetables to simmer gently for 25-30 minutes until tender.
- Remove from heat and let it sit, covered, for 5 minutes to allow the flavors to meld.
- Serve hot, garnished with fresh parsley.
