- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Red bell pepper, sliced - 1 medium
- Zucchini, chopped - 1 medium
- Tomato, diced - 1 medium
- Harissa paste - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 150 ml
Steps
- Heat olive oil in a tagine or a large skillet over medium heat.
- Add the chopped onion and garlic, sauté until they become translucent, about 5 minutes.
- Stir in the sliced red bell pepper and chopped zucchini, cooking for another 5 minutes until slightly softened.
- Add the diced tomato, harissa paste, ground cumin, ground coriander, salt, and black pepper; mix well and cook for 3 minutes.
- Pour in the water, bring to a simmer, and let it cook for 5 minutes to allow the flavors to meld.
- Gently place the fish fillets on top of the vegetable mixture, cover, and cook for 10-12 minutes until the fish is cooked through and flakes easily.
- Remove from heat, drizzle with lemon juice, and sprinkle with chopped cilantro before serving.
