Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Red bell pepper, sliced - 1 medium
  • Zucchini, chopped - 1 medium
  • Tomato, diced - 1 medium
  • Harissa paste - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 150 ml

Steps

  1. Heat olive oil in a tagine or a large skillet over medium heat.
  2. Add the chopped onion and garlic, sauté until they become translucent, about 5 minutes.
  3. Stir in the sliced red bell pepper and chopped zucchini, cooking for another 5 minutes until slightly softened.
  4. Add the diced tomato, harissa paste, ground cumin, ground coriander, salt, and black pepper; mix well and cook for 3 minutes.
  5. Pour in the water, bring to a simmer, and let it cook for 5 minutes to allow the flavors to meld.
  6. Gently place the fish fillets on top of the vegetable mixture, cover, and cook for 10-12 minutes until the fish is cooked through and flakes easily.
  7. Remove from heat, drizzle with lemon juice, and sprinkle with chopped cilantro before serving.
