Ingredients

  • Artichoke hearts - 400 g, canned or frozen
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, sliced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 200 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 150 g, canned, drained, and rinsed
  • Fresh parsley - a handful, chopped, for garnish
  • Lemon - 1, juiced

Steps

  1. In a tagine or large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  3. Stir in the sliced carrot and diced red bell pepper, cooking for another 5 minutes until they soften.
  4. Add the chopped tomato and cook for an additional 3 minutes, stirring occasionally.
  5. Incorporate the artichoke hearts, vegetable broth, ground cumin, ground coriander, cinnamon, turmeric, paprika, salt, and black pepper into the skillet.
  6. Bring the mixture to a gentle simmer, cover, and let it cook for 15 minutes, stirring occasionally.
  7. After 15 minutes, add the drained chickpeas and cook uncovered for another 5 minutes, allowing the flavors to meld.
  8. Remove from heat and stir in the lemon juice.
  9. Serve warm, garnished with fresh parsley.
