- Carrot - 1 medium, sliced
- Red bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Vegetable broth - 200 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 150 g, canned, drained, and rinsed
- Fresh parsley - a handful, chopped, for garnish
- Lemon - 1, juiced
Steps
- In a tagine or large skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Stir in the sliced carrot and diced red bell pepper, cooking for another 5 minutes until they soften.
- Add the chopped tomato and cook for an additional 3 minutes, stirring occasionally.
- Incorporate the artichoke hearts, vegetable broth, ground cumin, ground coriander, cinnamon, turmeric, paprika, salt, and black pepper into the skillet.
- Bring the mixture to a gentle simmer, cover, and let it cook for 15 minutes, stirring occasionally.
- After 15 minutes, add the drained chickpeas and cook uncovered for another 5 minutes, allowing the flavors to meld.
- Remove from heat and stir in the lemon juice.
- Serve warm, garnished with fresh parsley.
