  • Zucchini noodles - 300 grams
  • Ground lamb - 200 grams
  • Red bell pepper - 1, diced
  • Yellow onion - 1, chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent (about 3-4 minutes).
  2. Add the ground lamb to the skillet and cook until browned, breaking it up with a spoon (about 5-7 minutes).
  3. Stir in the diced red bell pepper, cumin, cinnamon, paprika, salt, and black pepper. Cook for another 3-4 minutes until the bell pepper softens.
  4. Add the tomato paste and mix well to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  5. Gently fold in the zucchini noodles and cook for 4-5 minutes until they are tender but not mushy.
  6. Remove from heat and stir in the chopped fresh parsley. Serve hot, topped with crumbled feta cheese if desired.
