- Chicken thighs - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, sliced
- Bell pepper - 1 medium, chopped
- Tomato - 1 medium, diced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 200 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Preheat your oven to 180°C (350°F).
- In a tagine or oven-safe dish, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Season the chicken thighs with salt, black pepper, cumin, coriander, cinnamon, and paprika, then add them to the dish and brown on all sides, about 5-7 minutes.
- Add the sliced carrot, chopped bell pepper, and diced tomato to the pot, stirring to combine.
- Pour in the chicken broth and bring to a simmer, then cover the dish with a lid or foil.
- Transfer the dish to the preheated oven and bake for 30 minutes.
- After 30 minutes, remove the lid, and bake for an additional 10-15 minutes to allow the sauce to reduce slightly.
- Once done, remove from the oven, stir in the lemon juice and chopped parsley, and serve hot.
