Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Tomato - 1 medium, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 200 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a tagine or oven-safe dish, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Season the chicken thighs with salt, black pepper, cumin, coriander, cinnamon, and paprika, then add them to the dish and brown on all sides, about 5-7 minutes.
  5. Add the sliced carrot, chopped bell pepper, and diced tomato to the pot, stirring to combine.
  6. Pour in the chicken broth and bring to a simmer, then cover the dish with a lid or foil.
  7. Transfer the dish to the preheated oven and bake for 30 minutes.
  8. After 30 minutes, remove the lid, and bake for an additional 10-15 minutes to allow the sauce to reduce slightly.
  9. Once done, remove from the oven, stir in the lemon juice and chopped parsley, and serve hot.
