  • Carrot, grated - 1 medium
  • Red bell pepper, chopped - 1 medium
  • Zucchini, chopped - 1 medium
  • Canned chickpeas, drained - 100 grams
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Feta cheese, crumbled - 50 grams
  • Lemon, juiced - 1

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft.
  3. Add the diced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the grated carrot, chopped red bell pepper, and zucchini, cooking for another 5 minutes until vegetables are tender.
  5. Add the drained chickpeas, tomato paste, cumin, cinnamon, paprika, salt, and black pepper. Mix well and let it simmer for 5 minutes.
  6. Roll out the whole wheat pizza dough on a floured surface to fit your baking tray.
  7. Transfer the rolled dough to the baking tray, spreading it out evenly.
  8. Spread the chicken and vegetable mixture over the pizza dough, leaving a small border around the edges.
