Ingredients

  • Chicken thighs - 400 grams, skinless
  • Olive oil - 2 tablespoons
  • Yellow onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Preserved lemon - 1, rind only, thinly sliced
  • Green olives - 100 grams, pitted and halved
  • Fresh cilantro - 2 tablespoons, chopped
  • Chicken broth - 250 ml
  • Water - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-safe dish, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. In a bowl, mix together the ground cumin, coriander, ginger, cinnamon, turmeric, salt, and black pepper, then rub this spice mixture over the chicken thighs.
  5. Add the seasoned chicken to the dish with the onions and garlic, browning each side for about 3-4 minutes.
  6. Add the preserved lemon slices, green olives, chicken broth, and water to the dish, stirring gently to combine.
  7. Cover the dish with a lid or aluminum foil and transfer it to the preheated oven.
  8. Bake for 40 minutes, then remove the cover and bake for an additional 10 minutes to allow the sauce to reduce slightly.
  9. Garnish with fresh cilantro before serving, and enjoy your Tagine de Poulet au Citron with whole grain couscous or a side salad.
