- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Preserved lemon - 1, rind only, thinly sliced
- Green olives - 100 grams, pitted and halved
- Fresh cilantro - 2 tablespoons, chopped
- Chicken broth - 250 ml
- Water - 100 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a large oven-safe dish, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- In a bowl, mix together the ground cumin, coriander, ginger, cinnamon, turmeric, salt, and black pepper, then rub this spice mixture over the chicken thighs.
- Add the seasoned chicken to the dish with the onions and garlic, browning each side for about 3-4 minutes.
- Add the preserved lemon slices, green olives, chicken broth, and water to the dish, stirring gently to combine.
- Cover the dish with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for 40 minutes, then remove the cover and bake for an additional 10 minutes to allow the sauce to reduce slightly.
