Ingredients

  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Red onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 200 grams, cooked (or 1 cup canned, drained)
  • Dried apricots - 50 grams, chopped
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Vegetable broth - 200 milliliters

Steps

  1. Heat the olive oil in a tagine or a large skillet over medium heat.
  2. Add the sliced red, yellow, and green bell peppers, along with the sliced red onion. Sauté for about 5 minutes until they start to soften.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Stir well to coat the vegetables in the spices.
  5. Add the cooked chickpeas and chopped dried apricots to the pan. Pour in the vegetable broth and bring to a simmer.
  6. Cover the tagine or skillet, reduce the heat to low, and let it cook for about 15 minutes, allowing the flavors to meld.
  7. Remove from heat and garnish with fresh parsley before serving.
