- Green bell pepper - 1 medium, sliced
- Red onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 200 grams, cooked (or 1 cup canned, drained)
- Dried apricots - 50 grams, chopped
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Vegetable broth - 200 milliliters
Steps
- Heat the olive oil in a tagine or a large skillet over medium heat.
- Add the sliced red, yellow, and green bell peppers, along with the sliced red onion. Sauté for about 5 minutes until they start to soften.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Stir well to coat the vegetables in the spices.
- Add the cooked chickpeas and chopped dried apricots to the pan. Pour in the vegetable broth and bring to a simmer.
- Cover the tagine or skillet, reduce the heat to low, and let it cook for about 15 minutes, allowing the flavors to meld.
- Remove from heat and garnish with fresh parsley before serving.
