  • Red onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Tomatoes - 2 medium, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Water - 200 milliliters

Steps

  1. In a tagine or a large skillet, heat the olive oil over medium heat.
  2. Add the sliced red onion and sauté for 5 minutes until translucent.
  3. Stir in the minced garlic, and cook for another minute until fragrant.
  4. Add the sliced red bell pepper and zucchini, cooking for 5 minutes until slightly softened.
  5. Stir in the diced tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for 5 minutes to allow the flavors to meld.
  6. Pour in the water, bring the mixture to a simmer, and cook for an additional 5 minutes.
  7. Gently place the fish fillets on top of the vegetable mixture. Cover and simmer for 10-12 minutes or until the fish is cooked through and flakes easily.
  8. Remove from heat and drizzle with lemon juice and chopped cilantro before serving.
