- Paprika - 1 teaspoon

- Fresh cilantro - 2 tablespoons, chopped

- Water - 200 milliliters
Steps
- In a tagine or a large skillet, heat the olive oil over medium heat.
- Add the sliced red onion and sauté for 5 minutes until translucent.
- Stir in the minced garlic, and cook for another minute until fragrant.
- Add the sliced red bell pepper and zucchini, cooking for 5 minutes until slightly softened.
- Stir in the diced tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for 5 minutes to allow the flavors to meld.
- Pour in the water, bring the mixture to a simmer, and cook for an additional 5 minutes.
- Gently place the fish fillets on top of the vegetable mixture. Cover and simmer for 10-12 minutes or until the fish is cooked through and flakes easily.
- Remove from heat and drizzle with lemon juice and chopped cilantro before serving.
