Ingredients

  • Spaghetti squash - 1 medium (about 500g)
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, diced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and place cut-side down on a baking sheet. Roast for 30-35 minutes until tender.
  2. While the squash is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the diced red onion and garlic, sautéing for about 3-4 minutes until softened.
  3. Add the diced zucchini, carrot, and red bell pepper to the skillet. Stir in the cumin, coriander, paprika, turmeric, and a pinch of salt and pepper. Sauté for another 5-7 minutes until the vegetables are tender but still crisp.
  4. Once the spaghetti squash is done roasting, remove it from the oven and let it cool slightly. Use a fork to scrape the flesh into spaghetti-like strands and add it to the skillet with the sautéed vegetables.
  5. Drizzle the lemon juice over the mixture, toss to combine, and cook for an additional 2-3 minutes to heat through.
  6. Garnish with fresh parsley before serving.
