  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Dried apricots - 50 grams, chopped
  • Almonds - 30 grams, chopped
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Ginger - 1 teaspoon, ground
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 300 milliliters
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Add the rabbit legs and brown on all sides, about 5 minutes.
  4. Stir in the sliced carrot and diced bell pepper, cooking for another 5 minutes.
  5. Add the chopped tomato, dried apricots, and almonds, mixing well.
  6. Sprinkle in the cinnamon, cumin, ginger, paprika, salt, and black pepper.
  7. Pour in the chicken broth, ensuring the rabbit is mostly submerged.
  8. Cover and reduce the heat to low, simmering for about 40 minutes or until the rabbit is tender.
  9. Garnish with fresh cilantro before serving.
