  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Cilantro - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Beef broth - 250 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a tagine or large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until translucent.
  3. Add the beef cubes to the pot, browning them on all sides.
  4. Stir in the sliced carrot, zucchini, and red bell pepper, cooking for about 5 minutes.
  5. Add the chopped tomato, cilantro, cumin, coriander, cinnamon, paprika, salt, and black pepper, stirring well to combine.
  6. Pour in the beef broth and bring the mixture to a simmer.
  7. Cover the tagine or pot, reduce the heat to low, and let it cook for 45 minutes, stirring occasionally until the beef is tender.
  8. Finish with a splash of lemon juice and garnish with additional cilantro if desired.
