- Ground beef - 250 grams
- Zucchini - 2 medium-sized
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, finely diced
- Red bell pepper - 1 medium, finely chopped
- Canned diced tomatoes - 200 grams
- Tomato paste - 2 tablespoons
- Moroccan spice blend - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 100 ml
Steps
- Spiralize the zucchini to create zucchini noodles and set aside.
- In a tagine pot or large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 3 minutes until translucent.
- Stir in the minced garlic, diced carrot, and chopped red bell pepper, cooking for another 5 minutes until soft.
- Add the ground beef to the pot and cook until browned, about 5-7 minutes, breaking it apart with a spoon.
- Stir in the canned diced tomatoes, tomato paste, Moroccan spice blend, salt, black pepper, and water.
- Bring the mixture to a simmer, then cover and cook for 10 minutes to allow the flavors to meld.
- Add the zucchini noodles to the pot, mixing gently, and cook for an additional 3-5 minutes until the noodles are tender but not mushy.
- Remove from heat, garnish with fresh parsley, and serve warm.
