Ingredients

  • Ground beef - 250 grams
  • Zucchini - 2 medium-sized
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, finely diced
  • Red bell pepper - 1 medium, finely chopped
  • Canned diced tomatoes - 200 grams
  • Tomato paste - 2 tablespoons
  • Moroccan spice blend - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 100 ml

Steps

  1. Spiralize the zucchini to create zucchini noodles and set aside.
  2. In a tagine pot or large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté for about 3 minutes until translucent.
  4. Stir in the minced garlic, diced carrot, and chopped red bell pepper, cooking for another 5 minutes until soft.
  5. Add the ground beef to the pot and cook until browned, about 5-7 minutes, breaking it apart with a spoon.
  6. Stir in the canned diced tomatoes, tomato paste, Moroccan spice blend, salt, black pepper, and water.
  7. Bring the mixture to a simmer, then cover and cook for 10 minutes to allow the flavors to meld.
  8. Add the zucchini noodles to the pot, mixing gently, and cook for an additional 3-5 minutes until the noodles are tender but not mushy.
  9. Remove from heat, garnish with fresh parsley, and serve warm.
