Ingredients

  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Eggplant - 1 small, diced
  • Tomato - 2 medium, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Chickpeas - 1 cup, cooked or canned, drained and rinsed
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium tagine or a heavy pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the diced zucchini, carrot slices, bell pepper, and eggplant to the pot. Sauté the vegetables for about 5-7 minutes until they begin to soften.
  4. Add the chopped tomatoes, cooked chickpeas, vegetable broth, cumin, coriander, paprika, salt, and black pepper to the pot. Stir well to combine all the ingredients.
  5. Cover the pot with a lid and reduce the heat to low. Let it simmer for about 20 minutes, stirring occasionally until the vegetables are tender.
  6. Once cooked, remove from heat and stir in the fresh cilantro and lemon juice. Adjust seasoning to taste.
  7. Serve warm with crusty bread or over couscous.
