- Zucchini - 1 medium, diced
- Carrot - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Eggplant - 1 small, diced
- Tomato - 2 medium, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Chickpeas - 1 cup, cooked or canned, drained and rinsed
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a medium tagine or a heavy pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced zucchini, carrot slices, bell pepper, and eggplant to the pot. Sauté the vegetables for about 5-7 minutes until they begin to soften.
- Add the chopped tomatoes, cooked chickpeas, vegetable broth, cumin, coriander, paprika, salt, and black pepper to the pot. Stir well to combine all the ingredients.
- Cover the pot with a lid and reduce the heat to low. Let it simmer for about 20 minutes, stirring occasionally until the vegetables are tender.
- Once cooked, remove from heat and stir in the fresh cilantro and lemon juice. Adjust seasoning to taste.
- Serve warm with crusty bread or over couscous.
