Ingredients

  • Bulgar wheat - 100 grams
  • Fresh parsley - 50 grams, finely chopped
  • Fresh mint - 20 grams, finely chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1 small, finely chopped
  • Lemon juice - 30 ml
  • Olive oil - 20 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the bulgar wheat under cold water, then soak it in a bowl with 200 ml of water for about 20 minutes until it softens.
  2. While the bulgar is soaking, prepare the vegetables by finely chopping the parsley, mint, and red onion, and dicing the tomato and cucumber.
  3. After 20 minutes, drain any excess water from the bulgar wheat and fluff it with a fork.
  4. In a large mixing bowl, combine the bulgar wheat, chopped parsley, mint, tomato, cucumber, and red onion.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
  6. Pour the dressing over the salad and toss everything together until evenly coated.
  7. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
