Ingredients
- Bulgar wheat - 100 grams
- Fresh parsley - 50 grams, finely chopped
- Fresh mint - 20 grams, finely chopped
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red onion - 1 small, finely chopped
- Lemon juice - 30 ml
- Olive oil - 20 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the bulgar wheat under cold water, then soak it in a bowl with 200 ml of water for about 20 minutes until it softens.
- While the bulgar is soaking, prepare the vegetables by finely chopping the parsley, mint, and red onion, and dicing the tomato and cucumber.
- After 20 minutes, drain any excess water from the bulgar wheat and fluff it with a fork.
- In a large mixing bowl, combine the bulgar wheat, chopped parsley, mint, tomato, cucumber, and red onion.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
- Pour the dressing over the salad and toss everything together until evenly coated.
- Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
