Ingredients
- Sweet potato - 300 grams (about 1 medium sweet potato)
- Cooked chickpeas - 100 grams (1/2 cup, drained and rinsed)
- Red onion - 50 grams (1/4 medium onion, finely chopped)
- Garlic - 2 cloves (minced)
- Cilantro - 15 grams (1/4 cup, chopped)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oats - 50 grams (1/2 cup, ground into flour)
- Olive oil - 1 tablespoon (for cooking)
- Whole wheat burger buns - 2
- Greek yogurt - 100 grams (for sauce)
- Lemon juice - 1 tablespoon
- Salt - a pinch (for yogurt sauce)
- Mixed salad greens - 50 grams (for serving)
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cube the sweet potato, then toss it with a little olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
- In a skillet, heat a teaspoon of olive oil over medium heat. Add the chopped red onion and garlic, sautéing until softened, about 3-4 minutes.
- In a large bowl, combine the roasted sweet potato, cooked chickpeas, sautéed onion and garlic, chopped cilantro, cumin, coriander, paprika, cinnamon, salt, black pepper, and ground oats. Mash together until well combined but still slightly chunky.
- Form the mixture into two burger patties.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- While the burgers are cooking, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, and a pinch of salt in a small bowl.
- To assemble, place each burger patty on a whole wheat bun, add a dollop of yogurt sauce, and top with mixed salad greens. Serve immediately.
