Ingredients

  • Sweet potatoes - 400 grams, peeled and diced
  • Chickpeas - 1 can (400 grams), drained and rinsed
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Diced tomatoes - 1 can (400 grams)
  • Vegetable broth - 250 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - a handful, chopped (for garnish)
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Add the sliced carrot and diced bell pepper to the pot, cooking for an additional 5 minutes until slightly softened.
  3. Stir in the diced sweet potatoes, drained chickpeas, and diced tomatoes. Mix well to combine.
  4. Add the vegetable broth, ground cumin, ground coriander, ground cinnamon, turmeric, paprika, salt, and black pepper. Stir to combine and bring to a gentle simmer.
  5. Cover the pot and let the tagine cook for 20-25 minutes, or until the sweet potatoes are tender and the flavors have melded together. Stir occasionally to prevent sticking.
  6. Once cooked, remove from heat and stir in the lemon juice. Adjust seasoning if necessary.
  7. Serve warm, garnished with fresh cilantro.
