- Chickpeas - 1 can (400 grams), drained and rinsed
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Diced tomatoes - 1 can (400 grams)
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - a handful, chopped (for garnish)
- Lemon - 1, juiced
Steps
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the sliced carrot and diced bell pepper to the pot, cooking for an additional 5 minutes until slightly softened.
- Stir in the diced sweet potatoes, drained chickpeas, and diced tomatoes. Mix well to combine.
- Add the vegetable broth, ground cumin, ground coriander, ground cinnamon, turmeric, paprika, salt, and black pepper. Stir to combine and bring to a gentle simmer.
- Cover the pot and let the tagine cook for 20-25 minutes, or until the sweet potatoes are tender and the flavors have melded together. Stir occasionally to prevent sticking.
- Once cooked, remove from heat and stir in the lemon juice. Adjust seasoning if necessary.
- Serve warm, garnished with fresh cilantro.
