- Sweet potatoes - 300 grams, peeled and diced
- Carrot - 100 grams, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Vegetable broth - 500 milliliters
- Coconut milk - 200 milliliters
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and grated ginger to the pot, stirring for another minute until fragrant.
- Stir in diced sweet potatoes and carrots, followed by cumin, coriander, turmeric, and cinnamon. Cook for 2-3 minutes to toast the spices.
- Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15-20 minutes or until the sweet potatoes and carrots are tender.
- Remove from heat and blend the soup until smooth, using an immersion blender or a regular blender in batches.
- Return the blended soup to the pot, stir in coconut milk, and season with salt and black pepper to taste. Heat through for 2-3 minutes.
- Serve hot, garnished with fresh cilantro.
