Ingredients

  • Sweet potatoes - 300 grams, peeled and diced
  • Carrot - 100 grams, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Vegetable broth - 500 milliliters
  • Coconut milk - 200 milliliters
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger to the pot, stirring for another minute until fragrant.
  3. Stir in diced sweet potatoes and carrots, followed by cumin, coriander, turmeric, and cinnamon. Cook for 2-3 minutes to toast the spices.
  4. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15-20 minutes or until the sweet potatoes and carrots are tender.
  5. Remove from heat and blend the soup until smooth, using an immersion blender or a regular blender in batches.
  6. Return the blended soup to the pot, stir in coconut milk, and season with salt and black pepper to taste. Heat through for 2-3 minutes.
  7. Serve hot, garnished with fresh cilantro.
