Ingredients

  • Sweet potatoes - 400 grams
  • Red onion - 50 grams, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel the sweet potatoes and cut them into 1.5 cm cubes.
  3. Place the sweet potato cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt, black pepper, cumin, and cinnamon. Toss to coat evenly.
  4. Roast the sweet potatoes in the preheated oven for 20-25 minutes, or until tender and lightly caramelized, stirring halfway through.
  5. While the sweet potatoes are roasting, prepare the dressing by whisking together the remaining 1 tablespoon of olive oil, fresh lemon juice, and a pinch of salt in a small bowl.
  6. In a large bowl, combine the roasted sweet potatoes, red onion, cherry tomatoes, and chopped parsley.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Serve warm or at room temperature.
