Ingredients

  • Sweet potatoes - 300 grams
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Ground coriander - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Chickpeas - 100 grams, cooked
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes, then boil them in salted water for about 10-15 minutes until tender.
  3. Drain the sweet potatoes and mash them in a bowl. Add 1 tablespoon of olive oil, salt, black pepper, cumin, coriander, and garlic powder. Mix until well combined.
  4. Spread the sweet potato mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
  5. Bake the crust in the preheated oven for 20 minutes or until it starts to firm up and slightly golden.
  6. While the crust is baking, prepare the toppings: in a bowl, combine chickpeas, diced red bell pepper, diced zucchini, and halved cherry tomatoes with the remaining tablespoon of olive oil, salt, and pepper.
  7. Remove the crust from the oven, and evenly distribute the vegetable mixture over the top.
  8. Sprinkle crumbled feta cheese and chopped parsley over the vegetables.
  9. Return the pizza to the oven and bake for an additional 15 minutes until the vegetables are tender and the cheese is slightly melted.
  10. Allow the pizza to cool for a few minutes before slicing and serving.
