- Sweet potatoes - 300 grams
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Ground cumin - 1/2 teaspoon
- Ground coriander - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Chickpeas - 100 grams, cooked
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Cherry tomatoes - 100 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cube the sweet potatoes, then boil them in salted water for about 10-15 minutes until tender.
- Drain the sweet potatoes and mash them in a bowl. Add 1 tablespoon of olive oil, salt, black pepper, cumin, coriander, and garlic powder. Mix until well combined.
- Spread the sweet potato mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 20 minutes or until it starts to firm up and slightly golden.
- While the crust is baking, prepare the toppings: in a bowl, combine chickpeas, diced red bell pepper, diced zucchini, and halved cherry tomatoes with the remaining tablespoon of olive oil, salt, and pepper.
- Remove the crust from the oven, and evenly distribute the vegetable mixture over the top.
- Sprinkle crumbled feta cheese and chopped parsley over the vegetables.
- Return the pizza to the oven and bake for an additional 15 minutes until the vegetables are tender and the cheese is slightly melted.
- Allow the pizza to cool for a few minutes before slicing and serving.
