- All-purpose flour - 200 grams
- Semolina - 50 grams
- Warm water - 150 ml
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Sweet potato - 200 grams, peeled and cubed
- Cumin powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Black pepper - to taste
Steps
- In a large bowl, mix the all-purpose flour, semolina, and salt. Gradually add warm water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
- While the dough is resting, steam the sweet potato cubes until tender, about 10-12 minutes. Once cooked, mash them in a bowl and stir in cumin, cinnamon, chili powder, garlic, parsley, feta cheese, and black pepper. Set aside to cool.
- Divide the rested dough into 4 equal portions. Roll each portion into a thin circle on a lightly floured surface.
- Place a generous spoonful of the sweet potato filling in the center of each dough circle. Fold the edges over to enclose the filling, forming a sealed pocket.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Cook each filled msemmen for about 3-4 minutes on each side until golden brown and crispy, adding more oil as needed.
- Serve warm, either as a standalone dish or with a side of yogurt or salad.
