Ingredients

  • Sweet potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Peel and chop the sweet potatoes into even-sized cubes.
  2. Place the sweet potato cubes in a pot of salted water and bring to a boil.
  3. Reduce the heat and simmer for 15-20 minutes, or until the sweet potatoes are tender.
  4. While the sweet potatoes are cooking, heat the olive oil in a small pan over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  5. Once the sweet potatoes are cooked, drain them and return them to the pot.
  6. Add the sautéed garlic, ground cumin, ground cinnamon, lemon juice, salt, and black pepper to the sweet potatoes.
  7. Mash everything together until smooth and creamy. Adjust the seasoning if necessary.
  8. Serve hot, garnished with chopped fresh parsley.
