Ingredients
- Sweet potato - 300 grams
- Chickpeas - 100 grams (cooked)
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Breadcrumbs - 50 grams
- Lettuce leaves - 2 (for serving)
- Tomato - 1 medium, sliced (for serving)
- Tahini sauce - 2 tablespoons (for serving)
Steps
- Peel and chop the sweet potato into small cubes. Boil them in salted water for about 15 minutes or until tender, then drain and let cool slightly.
- In a large mixing bowl, mash the cooked sweet potatoes and add the cooked chickpeas. Use a fork or potato masher to combine until mostly smooth with some texture remaining.
- Add the finely chopped red onion, minced garlic, chopped cilantro, cumin, coriander, paprika, salt, black pepper, and breadcrumbs to the sweet potato mixture. Mix well until all ingredients are combined.
- Form the mixture into two equal-sized patties, about 1.5 cm thick. Place them on a plate and refrigerate for about 10 minutes to firm up.
- Heat olive oil in a skillet over medium heat. Once hot, add the kefta patties and cook for about 4-5 minutes on each side, or until golden brown and heated through.
- Serve the burgers on a bed of lettuce, topped with sliced tomatoes and drizzled with tahini sauce.
