Ingredients

  • Sweet potato - 250 grams
  • Chickpea flour - 50 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Lettuce leaves - 2 large
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Whole grain buns - 2

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the sweet potato, then boil in salted water for about 10 minutes until tender. Drain and let cool slightly.
  3. In a large bowl, mash the sweet potato until smooth.
  4. Add chickpea flour, chopped red onion, minced garlic, cilantro, cumin, coriander, paprika, salt, and black pepper to the sweet potato. Mix until well combined.
  5. Shape the mixture into two patties.
  6. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
  7. Assemble the burgers by placing each patty on a whole grain bun, topped with lettuce, tomato, and cucumber.
