- Sweet potato - 250 grams
- Chickpea flour - 50 grams
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Lettuce leaves - 2 large
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Whole grain buns - 2
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cube the sweet potato, then boil in salted water for about 10 minutes until tender. Drain and let cool slightly.
- In a large bowl, mash the sweet potato until smooth.
- Add chickpea flour, chopped red onion, minced garlic, cilantro, cumin, coriander, paprika, salt, and black pepper to the sweet potato. Mix until well combined.
- Shape the mixture into two patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
- Assemble the burgers by placing each patty on a whole grain bun, topped with lettuce, tomato, and cucumber.
