Steps
- Preheat your grill or BBQ to medium-high heat.
- Peel and cut the sweet potato into 2 cm cubes.
- Cut the red bell pepper, zucchini, and red onion into similar-sized chunks.
- In a large bowl, combine the sweet potato, bell pepper, zucchini, and onion.
