Ingredients

  • Sweet potato - 300 grams

  • Zucchini - 1 medium

  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Skewers (wooden or metal) - 4

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. Peel and cut the sweet potato into 2 cm cubes.
  3. Cut the red bell pepper, zucchini, and red onion into similar-sized chunks.
  4. In a large bowl, combine the sweet potato, bell pepper, zucchini, and onion.
  5. In a small bowl, whisk together the olive oil, ground cumin, ground coriander, smoked paprika, cinnamon, salt, black pepper, and lemon juice.
  6. Pour the marinade over the vegetables and toss until evenly coated.
  7. Thread the marinated vegetables onto the skewers, alternating between sweet potatoes, bell pepper, zucchini, and onion.
  8. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
