Ingredients

  • Sweet potato - 300 grams
  • Chickpeas - 100 grams, canned and drained
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Gluten-free breadcrumbs - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons for frying
  • Plain yogurt - 100 grams (for sauce)
  • Lemon juice - 1 tablespoon (for sauce)
  • Salt - 1/4 teaspoon (for sauce)
  • Cucumber - 50 grams, finely diced (for sauce)

Steps

  1. Peel and chop the sweet potato into chunks and boil in salted water for about 15 minutes until tender. Drain and let cool slightly.
  2. In a mixing bowl, mash the sweet potato until smooth. Add the drained chickpeas and mash them together until combined.
  3. Stir in the chopped red onion, minced garlic, coriander powder, cumin powder, paprika, cilantro, gluten-free breadcrumbs, egg, salt, and black pepper. Mix well until fully combined.
  4. Form the mixture into two burger patties.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  6. While the burgers are cooking, prepare the yogurt sauce by mixing plain yogurt, lemon juice, diced cucumber, and salt in a small bowl.
