- Whole wheat pizza dough - 200 grams
- Sweet potato - 200 grams
- Olive oil - 2 tablespoons
- Za'atar spice blend - 1 tablespoon
- Red onion - 1 small, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- Peel and cube the sweet potato into small pieces, then toss with 1 tablespoon of olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20 minutes or until tender.
- While the sweet potatoes are roasting, roll out the whole wheat pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough to a baking tray lined with parchment paper.
- In a small bowl, mix the minced garlic with the remaining tablespoon of olive oil and za'atar spice.
- Spread the za'atar oil mixture evenly over the dough, leaving a small border around the edges.
- Once the sweet potatoes are roasted, remove them from the oven and distribute them evenly over the pizza dough.
- Top with sliced red onion and a sprinkle of fresh parsley.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
