Ingredients

  • Whole wheat pizza dough - 200 grams
  • Sweet potato - 200 grams
  • Olive oil - 2 tablespoons
  • Za'atar spice blend - 1 tablespoon
  • Red onion - 1 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Peel and cube the sweet potato into small pieces, then toss with 1 tablespoon of olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20 minutes or until tender.
  3. While the sweet potatoes are roasting, roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  4. Transfer the rolled-out dough to a baking tray lined with parchment paper.
  5. In a small bowl, mix the minced garlic with the remaining tablespoon of olive oil and za'atar spice.
  6. Spread the za'atar oil mixture evenly over the dough, leaving a small border around the edges.
  7. Once the sweet potatoes are roasted, remove them from the oven and distribute them evenly over the pizza dough.
  8. Top with sliced red onion and a sprinkle of fresh parsley.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  10. Remove from the oven, let cool for a few minutes, slice, and serve warm.
