Ingredients

  • Pizza dough - 200 grams
  • Sweet potato - 200 grams, peeled and thinly sliced
  • Olive oil - 2 tablespoons
  • Ras El Hanout spice blend - 1 teaspoon
  • Mozzarella cheese - 100 grams, shredded
  • Red onion - 1 small, thinly sliced
  • Fresh spinach - 50 grams
  • Feta cheese - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, toss the sliced sweet potatoes with 1 tablespoon of olive oil, Ras El Hanout, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes until tender.
  3. While the sweet potatoes are roasting, roll out the pizza dough on a floured surface to your desired thickness.
  4. Transfer the rolled-out dough onto a baking tray lined with parchment paper.
  5. Spread the remaining tablespoon of olive oil over the dough, then layer the shredded mozzarella cheese evenly across the surface.
  6. Once the sweet potatoes are done roasting, arrange them on top of the cheese, followed by the sliced red onion and fresh spinach.
  7. Sprinkle the crumbled feta cheese on top and season with additional salt and pepper if desired.
  8. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly.
  9. Remove from the oven, garnish with fresh coriander, slice, and serve hot.
