- Pizza dough - 200 grams
- Sweet potato - 200 grams, peeled and thinly sliced
- Olive oil - 2 tablespoons
- Ras El Hanout spice blend - 1 teaspoon
- Mozzarella cheese - 100 grams, shredded
- Red onion - 1 small, thinly sliced
- Fresh spinach - 50 grams
- Feta cheese - 50 grams, crumbled
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, toss the sliced sweet potatoes with 1 tablespoon of olive oil, Ras El Hanout, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes until tender.
- While the sweet potatoes are roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough onto a baking tray lined with parchment paper.
- Spread the remaining tablespoon of olive oil over the dough, then layer the shredded mozzarella cheese evenly across the surface.
- Once the sweet potatoes are done roasting, arrange them on top of the cheese, followed by the sliced red onion and fresh spinach.
- Sprinkle the crumbled feta cheese on top and season with additional salt and pepper if desired.
- Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly.
- Remove from the oven, garnish with fresh coriander, slice, and serve hot.
