Ingredients

  • Sweet potato - 250 grams
  • Ras el Hanout spice blend - 1 tablespoon
  • Chickpeas (cooked) - 100 grams
  • Oats (rolled) - 50 grams
  • Garlic (minced) - 1 clove
  • Red onion (finely chopped) - 30 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lettuce leaves - 2

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the sweet potato, then toss it in a baking tray with olive oil, salt, and black pepper. Roast for about 25 minutes until tender.
  3. In a mixing bowl, mash the roasted sweet potato with a fork, leaving some chunks for texture.
  4. Add the cooked chickpeas, minced garlic, chopped red onion, ras el hanout, and rolled oats to the sweet potato. Mix until well combined.
  5. Form the mixture into two burger patties.
  6. Heat a non-stick skillet over medium heat and cook the patties for about 5-7 minutes on each side until golden brown.
  7. While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, salt, and a tablespoon of water until smooth.
  8. Toast the whole wheat burger buns in the oven for 3-5 minutes.
  9. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the patty and a drizzle of tahini sauce. Top with fresh cilantro and the other half of the bun.
  10. Serve immediately with your favorite side.
