Ingredients

  • Sweet potato - 250 grams
  • Canned chickpeas - 1/2 cup (120 grams), drained and rinsed
  • Harissa paste - 2 tablespoons
  • Garlic - 1 clove, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Red onion - 1/4, finely chopped
  • Ground cumin - 1/2 teaspoon
  • Ground coriander - 1/2 teaspoon
  • Breadcrumbs - 1/4 cup (30 grams)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for frying)

  • Lettuce leaves - 2
  • Sliced tomato - 1 medium

Steps

  1. Peel and chop the sweet potato into small cubes. Boil in salted water for about 10-12 minutes, or until soft. Drain and let cool slightly.
  2. In a large bowl, mash the cooked sweet potato with a fork. Add the chickpeas and mash them together until combined but still slightly chunky.
  3. Stir in the harissa paste, minced garlic, chopped cilantro, red onion, ground cumin, ground coriander, breadcrumbs, salt, and black pepper. Mix until well combined.
  4. Divide the mixture into two equal portions and shape each into a patty.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. Toast the burger buns lightly in the same skillet or in a toaster.
  7. Assemble the burgers by placing a lettuce leaf and a slice of tomato on each bun, followed by the sweet potato and harissa patty. Top with additional cilantro if desired and serve immediately.
