- Sweet potato - 250 grams
- Canned chickpeas - 1/2 cup (120 grams), drained and rinsed
- Harissa paste - 2 tablespoons
- Garlic - 1 clove, minced
- Fresh cilantro - 2 tablespoons, chopped
- Red onion - 1/4, finely chopped
- Ground cumin - 1/2 teaspoon
- Ground coriander - 1/2 teaspoon
- Breadcrumbs - 1/4 cup (30 grams)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for frying)

- Lettuce leaves - 2
- Sliced tomato - 1 medium
Steps
- Peel and chop the sweet potato into small cubes. Boil in salted water for about 10-12 minutes, or until soft. Drain and let cool slightly.
- In a large bowl, mash the cooked sweet potato with a fork. Add the chickpeas and mash them together until combined but still slightly chunky.
- Stir in the harissa paste, minced garlic, chopped cilantro, red onion, ground cumin, ground coriander, breadcrumbs, salt, and black pepper. Mix until well combined.
- Divide the mixture into two equal portions and shape each into a patty.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- Toast the burger buns lightly in the same skillet or in a toaster.
- Assemble the burgers by placing a lettuce leaf and a slice of tomato on each bun, followed by the sweet potato and harissa patty. Top with additional cilantro if desired and serve immediately.
