- Pizza dough - 200 grams
- Sweet potato - 150 grams, diced
- Canned chickpeas - 100 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Harissa paste - 1 tablespoon (optional for heat)
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic, cumin, coriander, paprika, salt, and black pepper until well coated.
- Spread the seasoned sweet potatoes on a baking sheet and roast in the preheated oven for 15 minutes, or until tender.
- While the sweet potatoes are roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled dough to a pizza stone or baking sheet lined with parchment paper.
- In a bowl, mix the chickpeas with the remaining tablespoon of olive oil and harissa paste (if using).
- Once the sweet potatoes are done, remove them from the oven and spread them evenly over the pizza dough.
- Top with the chickpeas and crumbled feta cheese.
- Bake the pizza in the oven for 10-12 minutes, or until the crust is golden and crispy.
- Remove from the oven, sprinkle with fresh parsley, slice, and serve hot.
