Ingredients

  • Pizza dough - 200 grams
  • Sweet potato - 150 grams, diced
  • Canned chickpeas - 100 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Harissa paste - 1 tablespoon (optional for heat)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic, cumin, coriander, paprika, salt, and black pepper until well coated.
  3. Spread the seasoned sweet potatoes on a baking sheet and roast in the preheated oven for 15 minutes, or until tender.
  4. While the sweet potatoes are roasting, roll out the pizza dough on a floured surface to your desired thickness.
  5. Transfer the rolled dough to a pizza stone or baking sheet lined with parchment paper.
  6. In a bowl, mix the chickpeas with the remaining tablespoon of olive oil and harissa paste (if using).
  7. Once the sweet potatoes are done, remove them from the oven and spread them evenly over the pizza dough.
  8. Top with the chickpeas and crumbled feta cheese.
  9. Bake the pizza in the oven for 10-12 minutes, or until the crust is golden and crispy.
  10. Remove from the oven, sprinkle with fresh parsley, slice, and serve hot.
