Ingredients

  • Whole wheat pizza dough - 200 grams
  • Sweet potato - 150 grams, diced
  • Carrot - 100 grams, grated
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a bowl, toss the diced sweet potato with 1 tablespoon of olive oil, cumin, cinnamon, paprika, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until tender.
  3. While the sweet potatoes are roasting, prepare the pizza dough on a floured surface and shape it into a 10-inch round.
  4. In a small bowl, mix the tomato sauce with minced garlic, and spread it evenly over the pizza dough.
  5. Once the sweet potatoes are done, remove them from the oven and sprinkle the grated carrot over the sauce. Then, add the roasted sweet potatoes on top.
  6. Drizzle the remaining tablespoon of olive oil over the toppings and bake the pizza in the preheated oven for 15-20 minutes or until the crust is golden brown.
  7. Remove the pizza from the oven and sprinkle with chopped cilantro and a drizzle of lemon juice before slicing and serving.
