Ingredients
- Whole wheat pizza dough - 200 grams
- Sweet potato - 150 grams, diced
- Carrot - 100 grams, grated
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce - 100 grams
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 220°C (425°F).
- In a bowl, toss the diced sweet potato with 1 tablespoon of olive oil, cumin, cinnamon, paprika, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until tender.
- While the sweet potatoes are roasting, prepare the pizza dough on a floured surface and shape it into a 10-inch round.
- In a small bowl, mix the tomato sauce with minced garlic, and spread it evenly over the pizza dough.
- Once the sweet potatoes are done, remove them from the oven and sprinkle the grated carrot over the sauce. Then, add the roasted sweet potatoes on top.
- Drizzle the remaining tablespoon of olive oil over the toppings and bake the pizza in the preheated oven for 15-20 minutes or until the crust is golden brown.
- Remove the pizza from the oven and sprinkle with chopped cilantro and a drizzle of lemon juice before slicing and serving.
