Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chickpeas - 100 grams, cooked
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for 30 minutes.
  4. While the dough is rising, heat a pan over medium heat and sauté garlic and red onion in olive oil until translucent.
  5. Add diced red bell pepper and zucchini, and cook for another 5-7 minutes until softened. Stir in cumin, paprika, and chickpeas, cooking for an additional 2 minutes.
  6. Remove from heat and let the filling cool slightly. Stir in crumbled feta and chopped parsley.
  7. Preheat the oven to 220°C (428°F).
  8. Once the dough has risen, divide it into two equal portions. Roll each portion into a circle about 0.5 cm thick.
  9. Place half of the vegetable filling on one half of each dough circle, leaving a border. Fold the other half over to create a semi-circle and press the edges to seal.
  10. Transfer the stuffed khobz to a baking sheet lined with parchment paper. Bake for 15-20 minutes until golden brown.
  11. Remove from the oven, let cool for a few minutes, then slice and serve warm.
