Ingredients

  • 2 large bell peppers (any color)
  • 200g pizza dough
  • 100g canned chickpeas, rinsed and drained
  • 100g cherry tomatoes, halved
  • 50g red onion, finely chopped
  • 50g zucchini, diced
  • 50g feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 100g shredded mozzarella cheese
  • Fresh cilantro for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the tops off the bell peppers and remove the seeds. Lightly brush the outside with olive oil and place them upright in a baking dish.
  3. In a pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and sauté until translucent.
  4. Add the diced zucchini and cherry tomatoes to the pan. Cook for about 5 minutes until tender.
  5. Stir in the chickpeas, cumin, coriander, paprika, salt, and pepper. Cook for an additional 2-3 minutes. Remove from heat and mix in the crumbled feta cheese.
  6. Roll out the pizza dough on a floured surface to fit the base of the baking dish. Place the rolled dough in the dish, pressing it into the corners.
  7. Fill each bell pepper with the vegetable mixture, packing it tightly. Place the stuffed peppers on top of the pizza dough.
  8. Sprinkle shredded mozzarella cheese over the stuffed peppers.
  9. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.
  10. Remove from the oven and garnish with fresh cilantro before serving.
