Ingredients
- 2 large bell peppers (any color)
- 200g pizza dough
- 100g canned chickpeas, rinsed and drained
- 100g cherry tomatoes, halved
- 50g red onion, finely chopped
- 50g zucchini, diced
- 50g feta cheese, crumbled
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 100g shredded mozzarella cheese
- Fresh cilantro for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Cut the tops off the bell peppers and remove the seeds. Lightly brush the outside with olive oil and place them upright in a baking dish.
- In a pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and sauté until translucent.
- Add the diced zucchini and cherry tomatoes to the pan. Cook for about 5 minutes until tender.
- Stir in the chickpeas, cumin, coriander, paprika, salt, and pepper. Cook for an additional 2-3 minutes. Remove from heat and mix in the crumbled feta cheese.
- Roll out the pizza dough on a floured surface to fit the base of the baking dish. Place the rolled dough in the dish, pressing it into the corners.
- Fill each bell pepper with the vegetable mixture, packing it tightly. Place the stuffed peppers on top of the pizza dough.
- Sprinkle shredded mozzarella cheese over the stuffed peppers.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.
- Remove from the oven and garnish with fresh cilantro before serving.
