Ingredients

  • Whole wheat flour - 150g
  • Warm water - 100ml
  • Active dry yeast - 5g
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Chickpeas (cooked or canned) - 150g
  • Fresh spinach - 100g
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh cilantro (optional) - for garnish

Steps

  1. In a bowl, combine warm water and yeast, let it sit for 5 minutes until frothy.
  2. In a separate bowl, mix whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until it forms a dough.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a cloth, and let it rise for 30 minutes in a warm place.
  4. While the dough is rising, heat a pan over medium heat and add a splash of olive oil. Sauté the minced garlic for about 1 minute until fragrant.
  5. Add the spinach, cumin, paprika, black pepper, and lemon juice to the pan. Cook for about 3-4 minutes until the spinach is wilted. Stir in the chickpeas and cook for another 2 minutes. Remove from heat.
  6. Preheat your oven to 220°C (428°F).
  7. After the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a flatbread shape, about 1/2 cm thick.
  8. Transfer the flatbreads to a baking sheet lined with parchment paper. Spread the spinach and chickpea mixture evenly over each flatbread.
  9. Bake in the preheated oven for 15-20 minutes until the edges are golden brown.
  10. Remove from the oven and let cool slightly. Garnish with fresh cilantro if desired before serving.
