- Zucchini - 250 grams, grated
- Chickpea flour - 100 grams
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Lemon - 1, juiced
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture from the grated zucchini to ensure the fritters are crispy.
- In a large mixing bowl, combine the grated zucchini, chickpea flour, chopped parsley, chopped cilantro, minced garlic, ground cumin, ground coriander, paprika, cayenne pepper, salt, black pepper, baking powder, and lemon juice. Mix until well combined.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Scoop about 2 tablespoons of the zucchini mixture and form it into a patty. Place it in the skillet and flatten it slightly. Repeat with the remaining mixture, cooking 2-3 fritters at a time.
- Cook each fritter for 3-4 minutes on each side or until golden brown and crispy. Add more oil as needed between batches.
- Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Serve warm with a side of yogurt or a spicy dipping sauce.
