  • Cherry tomatoes - 200 grams
  • Mushrooms - 150 grams, halved
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the olive oil, paprika, cumin, cinnamon, cayenne pepper, salt, black pepper, and lemon juice to create a marinade.
  3. Add the bell pepper, zucchini, red onion, cherry tomatoes, and mushrooms to the marinade and toss well to coat all the vegetables evenly.
