- Salt - 1/2 teaspoon

- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- Preheat the grill to medium-high heat.
- In a large bowl, combine the olive oil, paprika, cumin, cinnamon, cayenne pepper, salt, black pepper, and lemon juice to create a marinade.
- Add the bell pepper, zucchini, red onion, cherry tomatoes, and mushrooms to the marinade and toss well to coat all the vegetables evenly.
