- Canned diced tomatoes - 400 grams
- Tomato paste - 2 tablespoons
- Harissa - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced bell pepper and carrot, cooking for an additional 5 minutes until softened.
- Stir in the canned diced tomatoes, tomato paste, harissa, cumin, coriander, paprika, salt, and black pepper.
- Bring the mixture to a simmer, then reduce heat to low and cook uncovered for 15 minutes, stirring occasionally.
- Remove from heat and stir in the chopped cilantro and lemon juice.
