Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Canned diced tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Harissa - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced bell pepper and carrot, cooking for an additional 5 minutes until softened.
  5. Stir in the canned diced tomatoes, tomato paste, harissa, cumin, coriander, paprika, salt, and black pepper.
  6. Bring the mixture to a simmer, then reduce heat to low and cook uncovered for 15 minutes, stirring occasionally.
  7. Remove from heat and stir in the chopped cilantro and lemon juice.
  8. Serve warm over couscous or with crusty bread.
