Ingredients
- Basmati rice - 150 grams
- Tomato puree - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - a handful, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear. Set aside to drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic, diced red bell pepper, and diced carrot to the pan. Cook for another 3-4 minutes until the vegetables soften.
- Stir in the cumin, paprika, cayenne pepper, salt, and black pepper. Cook for 1 minute until the spices are fragrant.
- Add the tomato puree and vegetable broth to the saucepan. Bring to a boil, then reduce the heat and let it simmer for 5 minutes.
- Add the rinsed basmati rice to the saucepan, stirring well to combine. Cover and let it simmer on low heat for about 15 minutes, or until the rice is cooked and has absorbed the liquid.
- Once cooked, remove from heat and let it sit for 5 minutes before fluffing with a fork.
- Stir in the chopped cilantro and lemon juice. Adjust seasoning if necessary and serve warm.
