- Canned diced tomatoes - 400 grams
- Tomato paste - 2 tablespoons
- Vegetable broth - 200 ml
- Chickpeas (cooked) - 100 grams
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon (adjust to taste)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped
- Lemon - 1, juiced
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent, about 5 minutes.
- Add the diced bell pepper to the skillet and cook for an additional 3 minutes until softened.
- Stir in the canned diced tomatoes, tomato paste, and vegetable broth. Mix well.
- Add the cooked chickpeas, cumin, cinnamon, paprika, cayenne pepper, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld together.
- Once the sauce has thickened slightly, add the cooked pasta to the skillet, tossing to combine thoroughly.
- Remove from heat, then stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
