Ingredients

  • Onion - 1 medium, diced
  • Bell pepper (red or yellow) - 1, diced
  • Canned diced tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 200 ml
  • Chickpeas (cooked) - 100 grams
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon (adjust to taste)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped
  • Lemon - 1, juiced

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent, about 5 minutes.
  3. Add the diced bell pepper to the skillet and cook for an additional 3 minutes until softened.
  4. Stir in the canned diced tomatoes, tomato paste, and vegetable broth. Mix well.
  5. Add the cooked chickpeas, cumin, cinnamon, paprika, cayenne pepper, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld together.
  6. Once the sauce has thickened slightly, add the cooked pasta to the skillet, tossing to combine thoroughly.
  7. Remove from heat, then stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
  8. Serve hot, garnished with additional parsley if desired.
