  • Fresh ginger - 1 tablespoon, grated
  • Green chili - 1, finely chopped (adjust to taste)
  • Olive oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon (or to taste)
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add cumin seeds and sauté for 30 seconds until fragrant.
  3. Stir in chopped red onion and cook for about 5 minutes until softened.
  4. Add minced garlic, grated ginger, and green chili, cooking for another 2 minutes.
  5. Add the chopped tomatoes, coriander powder, smoked paprika, salt, and black pepper.
  6. Stir well and bring the mixture to a simmer, cooking for about 15-20 minutes until the tomatoes break down and the chutney thickens.
  7. Remove from heat and stir in lemon juice.
  8. Let cool slightly, then serve warm or at room temperature, garnished with fresh cilantro.
