- Pizza dough - 250 grams
- Eggplant - 200 grams, diced
- Tomato sauce - 200 ml
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - a handful, chopped
- Fresh parsley - a handful, chopped
- Red onion - 50 grams, thinly sliced
- Bell pepper - 100 grams, thinly sliced
Steps
- Preheat your oven to 220°C (428°F).
- In a bowl, toss the diced eggplant with 1 tablespoon of olive oil, cumin, paprika, cayenne pepper, salt, and black pepper. Spread on a baking tray and roast in the oven for about 20 minutes until tender.
- While the eggplant is roasting, prepare the pizza dough according to package instructions or your favorite recipe.
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- In a small saucepan, heat the remaining olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Then, add the tomato sauce and simmer for 5 minutes. Season with salt and pepper to taste.
- Spread the tomato sauce evenly over the rolled-out pizza dough.
- Once the eggplant is done roasting, distribute it evenly over the sauce. Top with sliced red onion and bell pepper.
- Bake the pizza in the preheated oven for 15-20 minutes until the crust is golden and crispy.
