Ingredients

  • Pizza dough - 250 grams
  • Eggplant - 200 grams, diced
  • Tomato sauce - 200 ml
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - a handful, chopped
  • Fresh parsley - a handful, chopped
  • Red onion - 50 grams, thinly sliced
  • Bell pepper - 100 grams, thinly sliced

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a bowl, toss the diced eggplant with 1 tablespoon of olive oil, cumin, paprika, cayenne pepper, salt, and black pepper. Spread on a baking tray and roast in the oven for about 20 minutes until tender.
  3. While the eggplant is roasting, prepare the pizza dough according to package instructions or your favorite recipe.
  4. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  5. In a small saucepan, heat the remaining olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Then, add the tomato sauce and simmer for 5 minutes. Season with salt and pepper to taste.
  6. Spread the tomato sauce evenly over the rolled-out pizza dough.
  7. Once the eggplant is done roasting, distribute it evenly over the sauce. Top with sliced red onion and bell pepper.
  8. Bake the pizza in the preheated oven for 15-20 minutes until the crust is golden and crispy.
