Ingredients

  • Whole wheat pizza dough - 250 grams
  • Eggplant - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Canned diced tomatoes - 400 grams
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Red onion - 1 small, thinly sliced
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a large bowl, toss the diced eggplant with 1 tablespoon of olive oil, salt, and pepper. Spread it evenly on a baking sheet and roast in the oven for 20 minutes, or until tender and golden.
  3. While the eggplant is roasting, heat the remaining olive oil in a saucepan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Stir in the canned diced tomatoes, ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and pepper. Simmer for 10 minutes, allowing the sauce to thicken and the flavors to meld.
  5. Roll out the whole wheat pizza dough on a floured surface to your desired thickness. Transfer to a pizza stone or baking sheet.
  6. Spread the spicy tomato sauce evenly over the rolled-out dough. Top with the roasted eggplant, sliced red onion, and sprinkle with chili flakes if desired.
  7. Bake in the oven for 10-12 minutes, or until the crust is golden and crispy.
  8. Remove from the oven and garnish with fresh cilantro before slicing and serving.
