- Shrimp (peeled and deveined) - 250 grams
- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 3 cloves
- Bell pepper (diced) - 1 medium
- Tomato (diced) - 1 medium
- Cilantro (chopped) - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 400 milliliters
- Lemon (juiced) - 1 medium
Steps
- In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced bell pepper to the pot, cooking for another 2-3 minutes until fragrant.
- Stir in the diced tomato, cumin, paprika, cayenne pepper, salt, and black pepper. Cook for 3-4 minutes, allowing the tomatoes to soften.
- Add the basmati rice to the pot, stirring well to coat the rice with the spices and vegetables.
- Pour in the water and bring to a boil. Once boiling, reduce heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, season the shrimp with salt, pepper, and lemon juice.
- In a separate pan, heat a tablespoon of olive oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through.
- Once the rice is ready, fluff it with a fork and gently fold in the cooked shrimp and chopped cilantro.
- Serve hot, garnished with additional cilantro and a lemon wedge if desired.
