Ingredients

  • Shrimp (peeled and deveined) - 250 grams
  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 3 cloves
  • Bell pepper (diced) - 1 medium
  • Tomato (diced) - 1 medium
  • Cilantro (chopped) - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 400 milliliters
  • Lemon (juiced) - 1 medium

Steps

  1. In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and diced bell pepper to the pot, cooking for another 2-3 minutes until fragrant.
  3. Stir in the diced tomato, cumin, paprika, cayenne pepper, salt, and black pepper. Cook for 3-4 minutes, allowing the tomatoes to soften.
  4. Add the basmati rice to the pot, stirring well to coat the rice with the spices and vegetables.
  5. Pour in the water and bring to a boil. Once boiling, reduce heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
  6. While the rice is cooking, season the shrimp with salt, pepper, and lemon juice.
  7. In a separate pan, heat a tablespoon of olive oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through.
  8. Once the rice is ready, fluff it with a fork and gently fold in the cooked shrimp and chopped cilantro.
  9. Serve hot, garnished with additional cilantro and a lemon wedge if desired.
