  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon (adjust to taste)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until they are soft and translucent, about 5 minutes.
  2. Add the chopped carrot and cubed pumpkin to the pot, stirring to combine with the onion and garlic.
  3. Sprinkle in the cumin, coriander, cayenne pepper, salt, and black pepper, stirring well to coat the vegetables in the spices.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes, or until the pumpkin is tender.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer it to a blender in batches.
  6. Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh cilantro.
