- Carrot - 1 medium, chopped
- Olive oil - 2 tablespoons
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon (adjust to taste)
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until they are soft and translucent, about 5 minutes.
- Add the chopped carrot and cubed pumpkin to the pot, stirring to combine with the onion and garlic.
- Sprinkle in the cumin, coriander, cayenne pepper, salt, and black pepper, stirring well to coat the vegetables in the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes, or until the pumpkin is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer it to a blender in batches.
