Ingredients

  • Green lentils - 150 grams
  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 500 ml of water. Bring to a boil, then reduce the heat and simmer for 20-25 minutes until tender. Drain and let cool.
  2. In a large mixing bowl, combine the diced red bell pepper, cucumber, cherry tomatoes, red onion, chopped parsley, and chopped mint.
  3. In a separate small bowl, whisk together the olive oil, lemon juice, ground cumin, paprika, cayenne pepper, salt, and black pepper to create the dressing.
  4. Add the cooled lentils to the bowl with the chopped vegetables and pour the dressing over the top. Gently toss everything together until well combined.
  5. Taste and adjust seasoning if necessary. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
