- cooked green or brown lentils - 150 grams
- olive oil - 2 tablespoons
- onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- red bell pepper - 1, diced
- carrot - 1, grated
- cumin - 1 teaspoon
- coriander - 1 teaspoon
- paprika - 1 teaspoon
- cayenne pepper - 1/4 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- tomato sauce - 100 grams
- fresh cilantro - 2 tablespoons, chopped
- vegan cheese (optional) - 50 grams
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Add the diced red bell pepper and grated carrot, cooking for another 3-4 minutes until softened.
- Mix in the cooked lentils, cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Cook for an additional 5 minutes, stirring well to combine the flavors.
- Spread the tomato sauce evenly over the pizza dough.
- Top the sauce with the lentil mixture, distributing it evenly across the pizza.
- If using, sprinkle the vegan cheese over the lentil topping.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
- Remove from the oven, garnish with fresh cilantro, slice, and serve hot.
