Ingredients

  • pizza dough - 200 grams
  • cooked green or brown lentils - 150 grams
  • olive oil - 2 tablespoons
  • onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • red bell pepper - 1, diced
  • carrot - 1, grated
  • cumin - 1 teaspoon
  • coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • cayenne pepper - 1/4 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • tomato sauce - 100 grams
  • fresh cilantro - 2 tablespoons, chopped
  • vegan cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled dough to a baking sheet lined with parchment paper.
  4. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Stir in the minced garlic and cook for an additional 1 minute.
  6. Add the diced red bell pepper and grated carrot, cooking for another 3-4 minutes until softened.
  7. Mix in the cooked lentils, cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Cook for an additional 5 minutes, stirring well to combine the flavors.
  8. Spread the tomato sauce evenly over the pizza dough.
  9. Top the sauce with the lentil mixture, distributing it evenly across the pizza.
  10. If using, sprinkle the vegan cheese over the lentil topping.
  11. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
