- Basmati rice - 150 grams
- Water - 300 ml
- Harissa paste - 2 tablespoons
- Olive oil - 1 tablespoon
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced red bell pepper, carrot, and zucchini to the saucepan. Sauté for another 5 minutes until the vegetables soften.
- Stir in the harissa paste, cumin, salt, and black pepper, cooking for an additional 2 minutes to combine the flavors.
- Add the rinsed rice to the saucepan and stir to coat the rice with the vegetable mixture.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the water is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh chopped parsley before serving.
