Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Harissa paste - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the diced red bell pepper, carrot, and zucchini to the saucepan. Sauté for another 5 minutes until the vegetables soften.
  4. Stir in the harissa paste, cumin, salt, and black pepper, cooking for an additional 2 minutes to combine the flavors.
  5. Add the rinsed rice to the saucepan and stir to coat the rice with the vegetable mixture.
  6. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the water is absorbed.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh chopped parsley before serving.
