- All-purpose flour - 200 grams
- Water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 30 ml
- Salt - 5 grams
- Harissa paste - 50 grams
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Bell pepper - 50 grams, diced
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 10 grams, chopped
- Lemon juice - 10 ml
Steps
- In a bowl, combine warm water and active dry yeast, allowing it to sit for 5 minutes until frothy.
- In a separate mixing bowl, combine all-purpose flour and salt, then create a well in the center.
- Pour the yeast mixture and olive oil into the well, mixing until a dough forms.
- Knead the dough for about 5-7 minutes on a floured surface until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
- Preheat your oven to 220°C (425°F) and place a baking sheet inside to heat.
- Once the dough has risen, punch it down and roll it out into two flat, round shapes about 1 cm thick.
- Carefully transfer the flatbreads onto a piece of parchment paper.
- Spread 25 grams of harissa paste on each flatbread, leaving a small border around the edge.
- Top with halved cherry tomatoes, sliced red onion, and diced bell pepper.
- Sprinkle crumbled feta cheese over the top.
- Transfer the flatbreads (with parchment paper) onto the preheated baking sheet and bake for 15-18 minutes until the edges are golden brown.
- Remove from the oven, drizzle with fresh lemon juice, and garnish with chopped parsley before serving.
