Ingredients

  • All-purpose flour - 200 grams
  • Water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Harissa paste - 50 grams
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Bell pepper - 50 grams, diced
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 10 grams, chopped
  • Lemon juice - 10 ml

Steps

  1. In a bowl, combine warm water and active dry yeast, allowing it to sit for 5 minutes until frothy.
  2. In a separate mixing bowl, combine all-purpose flour and salt, then create a well in the center.
  3. Pour the yeast mixture and olive oil into the well, mixing until a dough forms.
  4. Knead the dough for about 5-7 minutes on a floured surface until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
  6. Preheat your oven to 220°C (425°F) and place a baking sheet inside to heat.
  7. Once the dough has risen, punch it down and roll it out into two flat, round shapes about 1 cm thick.
  8. Carefully transfer the flatbreads onto a piece of parchment paper.
  9. Spread 25 grams of harissa paste on each flatbread, leaving a small border around the edge.
  10. Top with halved cherry tomatoes, sliced red onion, and diced bell pepper.
  11. Sprinkle crumbled feta cheese over the top.
  12. Transfer the flatbreads (with parchment paper) onto the preheated baking sheet and bake for 15-18 minutes until the edges are golden brown.
  13. Remove from the oven, drizzle with fresh lemon juice, and garnish with chopped parsley before serving.
