Ingredients

  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, mix olive oil, minced garlic, cumin, paprika, cayenne pepper, ground coriander, salt, black pepper, and lemon juice to create a marinade.
  2. Place the quail in the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the quail from the marinade and let excess marinade drip off.
  5. Grill the quail for about 6-8 minutes on each side, or until the internal temperature reaches 74°C (165°F) and they are nicely charred.
  6. Remove from the grill and let rest for 5 minutes before serving.
  7. Garnish with fresh parsley before serving.
